Quick answer
Gyros is meat cooked on a vertical spit; souvlaki is meat grilled on a skewer. In Athens, 'souvlaki' can also mean a pita wrap, and 'kalamaki' means the skewer. In Thessaloniki, the skewer itself is usually called souvlaki.
